I like to combine various flavors from around the world whenever I'm cooking. I've lived in the South all of my life and what 'WE' Southern folks love, is our Catfish. It doesn't matter how it's cooked: fried, baked seared, if it's on a plate folks are going to go in! I wanted to combine Latin flavors and create a dish that's simple, fresh and easy for anyone to make within 20-30 minutes.
Garlic Herb Catfish With Grilled Sweet Onion Poblano Relish - Serves 4
4 (6-ounce) catfish fillets
1 cup Garlic Herb marinade
3 tablespoons vegetable oil, divided
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
Grilled Sweet Onions or Vidalia Onion Poblano Relish
Garnish: thinly sliced radishes
FIRST in a large shallow dish, combine fish and marinade, cover and refrigerate 30 minutes.
NEXT Remove fish from marinade; discard marinade, Pat fish with paper towels. Brush with 2 tablespoons oil, and sprinkle with salt and pepper.
LAST Brush a non-stick skillet with remaining 1 tablespoon oil, and a heat over medium-high heat. Add fish, and cook until fish can be easily turned with a spatula, about 3 minutes. Turn fish; cook until fish is opaque and flakes easily, about 2 minutes more. Serve with Sweet Onion Poblano Relish, Garnish with radish, if desired.
* I used Mrs. Dash Garlic Herb marinade because it doesn't have high fructose corn syrup.
Sweet Onion Poblano Relish
Makes about 2 cups
2 medium poblano peppers
1 medium Sweet Onions, cut into wedges
2 tablespoons vegetable oil, divided
1/2 cup chopped fresh cilantro
1/2 cup chopped green onion
1 tablespoon fresh lime juice
1 teaspoon kosher salt
1/4 teaspoon crushed red pepper
1/8 teaspoon ground cumin
1/8 teaspoon garlic powder
